Menu Plan Monday
I've been a slacker on Menu Plan Monday for the past few weeks but this week I am getting back on track.
Here's my menu for this week:
Monday: Chicken cheese casserole, peas, fruit Tuesday: Johnny M Casserole (recipe follows), jello with fruit Wednesday: Artichoke Pasta, cherry cream cheese pie Thursday: Crock Pot beef stew, cornbread Friday: Leftovers/ fend for yourself or go to bed hungry.
3/4 to 1 lb ground beef 1 pkg dry sloppy joe seasoning mix 1 can tomato soup, undiluted 17 oz can of corn, drained, or frozen corn 1 cup water 2 cups cooked macaroni or similar small noodle 2 cups grated cheddar cheese, 1/2 cup reserved
Preheat oven to 350 and boil water for noodles. Cook noodles al dente as instructed on package. Meanwhile, brown the ground beef and drain. Mix together all ingredients, except reserved cheese, over low heat. Spray a 9 x 13 casserole dish and pour mixture in. Sprinkle reserved cheddar cheese over the top and bake 30-45 min until hot and bubbly.
Cherry Cream Cheese Pie
1 graham cracker crust 1 8 oz pkg cream cheese, at room temperature 1 14oz can sweetened condensed milk 1/3 cup lemon juice 1 t vanilla extract 1 21 oz can cherry pie filling, refrigerated
In mixer, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Stir in lemon and vanilla. Pour mixture into pie crust and chill. Pour cherry topping over the pie and re-chill until set.
