Health Update and Menu Plan Monday

First off,
a great big thank you
to everyone who has been supporting me
through not feeling well the last few weeks,
the tests and the endless whining.

I have good news though!
Today, Sunday, I have felt like myself!

I didn't realize how NOT like myself
I have felt until I felt better today.

I have been able to eat,
I have had energy
I have just been so happy today!

Thank you, thank you.
Now, just PLEASE let it hold
for two weeks so we can have a good
Disney trip!

Okay, so here we are,
Menu Plan Monday

From last week,
a couple of recipe reviews:

Spaghetti pie-

this got a "middle thumbs"
from my family.

They ate it but no one gave it rave reviews
or headed back for seconds.
I won't omit it from our rotation
quite yet, however.
Next time I will use a smooth spaghetti
sauce instead of diced tomatoes.

Cheesy Chicken Pot Pie-

This one got a 3/4 thumbs from the kids
and a big thumbs up from my mother in law.
I didn't get to try it due to my recent health issues
and was very disappointed to find out there
were no leftovers!

I will definitely be making it again.

Okay, new menu plan for this week!

Monday-
Chicken Eugene
(if you use the dried beef for this, please rinse it first or the recipe will be too salty!)
asparagus
rice (this recipe makes a nice gravy)
fruit

Tuesday-
Tacos (taco salad for me)
corn
jello with fruit

Wednesday-
Spaghetti with homemade sauce (and freeze half for return from trip)
garlic bread

Thursday-
Artichoke pasta
salad
peas

Friday-
Breakfast supper and fridge smorgasboard in prep for departure tomorrow.

Desserts:
Carryover from last week: brownies and snickerdoodles

Easy-peasy, lemon-squeezy week!

Thanks so much for letting me know about the link! I fixed it! Tghe chicken bundles were very yummy, i made them last week!

So glad to hear your feeling better, what fun your going to have at the "Happiest Place On Earth"!!!

Thanks for the welcome! Sorry to hear that you've been "under" lately... that's never cool for anyone. We really like that Teriyaki Chicken recipe here... let me know what you think if you try it! I LOVE easy, breezy cooking weeks... and everything on your menu looks so comforting. Hope your week goes well! :)
