A Must-Make Breakfast





My Sister in Law, Michelle, visited over Christmas break
along with my brother and adorable nephew Nathaniel.

While she was here, she made us the most fantastic breakfast ever.
It was SO GOOD!
I begged for the recipe
and made it for my kids during one of our MANY recent snow days.

You MUST make it!


Michelle's Oven Pancakes

Preheat the oven to 375*.
Take two round cake pans and place a scant tablespoon of butter in each.
Toss them into the preheating oven.

Meanwhile, begin mixing the batter:
3 eggs
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt.

Pull out the cake tins and turn them so the melted butter coats the bottom and sides of the cake tins.
Pour the batter in the two cake tins, splitting as evenly as possible.

Put cake tins in the oven on the middle rack, keeping in mind that the pancakes will rise.
Bake them for approximately 20-25 minutes.

While they are baking, choose your toppings.
We have used apples and cooked them with butter and brown sugar.
We have also used just syrup or just powdered sugar.
Obviously, you can also use blueberries!
The possibilities are endless.
