A Tip of the Hat and Menu Plan Monday

Hello!

Today I am tipping my hat to all you moms out there
who work full time or even part time
outside of the home.

After 13 years of being home with my kids
(which was work, don't doubt it!)
I registered to be a substitute teacher two weeks ago.

Because I have a background in Special Ed, 
I was called often to sub.
Surprisingly often.
So often, in fact, 
that last week I worked 30 hours.

and it DAMN. NEAR. KILLED. ME!

Good Lord, women, how do you DO it??
I was snippy with the kids,
exhausted and ornery with Rob.
I fell behind on the laundry,
was in despair at the state of the home.

If it weren't for my planned menus through
MENU PLAN MONDAY,
we would have not eaten or done drive throughs
nearly all week.
The menu plan saved that area for sure.

This week, I am cutting way back on subbing.
I missed being here when my kids get home.
I missed having time to do special treats like bake banana cake.
I missed greeting them with a cheerful manner.

I may be able to work my way up to subbing with that kind of frequency
but for now it was too much, too soon
for my family and for me.

And like I said,
to those of you who do it
and do it well,
I absolutely bow down.

Now, my menu plan!

Breakfast plans:

butter sugar cereal (cream of wheat)
cinnamon raisin bagels with cream cheese or peanut butter
breakfast burritos
french toast sticks and bacon
baggie omelets

Dinners:

Monday: pizza with the aunts and cousins, brownies
Tuesday: glazed salmon, garlic potatoes, fruit
Wednesday: apricot glazed pork chops, rice, green beans
Thursday: meatball hoagies, oven fries
Friday: pork fried rice, fruit
Saturday: pasta with homemade meat sauce, garlic bread
