Menu Plan Monday



Hello dear Internet!

Another Monday is upon us
which means the start of another busy week!

For us the week will be even busier than usual:
Four play practices, culminating in a play performance on Friday,
two baseball practices, one baseball game, one Mad Science class
and chaperoning a half day field trip -- and Rob out of town for most of it!

Isn't it amazing that somewhere in these busy times
meals must be made??

Ladies, we are SUPERWOMEN!!
If only they made a Superwoman suit in my size!

Our menu plan this week
draws exclusively from the foods in our pantry and freezer.
Several are new recipes to me and below,
I will post a requested recipe from last week.

snickerdoodles (from Hillbilly Housewife.com)

Wednesday-
Crock pot meatloaf (from Allrecipes.com)
mashed potatoes
roasted asparagus

Thursday-
Hearty Ham Casserole (from Allrecipes.com)
green beans
jello jigglers

Friday-
Quick dinner for ShowTime!
scrambled eggs with toast

Saturday-
Dad's out of town-
it's leftovers for everybody!


Requested recipe from last week:

Chicken Cheese Casserole


Ingredients:

2 T butter
1/2 onion, chopped
1 t minced garlic
celery salt
1 can cream of chicken soup
1 cup evaporated milk
2 cups coarsely chopped chicken (
(this is great taken from roasted chickens, rotisserie chickens etc)
2 cups cheddar cheese
1 cup parmesan cheese
2 cups cooked rice

(optional- sliced mushrooms (canned or jarred), pimentos)


Preheat oven to 350*. Spray a 9 x 13 pyrex type dish with cooking spray.

In a large skillet, melt the butter over med heat. Add the onions and garlic and a few good shakes of garlic salt. Sautee the onion until soft and translucent. Pour in the can of chicken soup and whisk well until smooth and blended. Shake the can of evaporated milk, measure out one cup and pour into the skillet. Whisk well and bring to a boil over med high heat. Whisk for two minutes. Turn heat to low, fold in chicken until well combined. Fold in one cup of the shredded cheddar and stir to combine. Add salt and pepper to taste. Finally, fold in the two cups of cooked rice and mix gently.

Pour skillet mixture into the prepared 9 x 13 pyrex dish. Sprinkle the remaining cheeses over the top. Bake at 350, uncovered, for about thirty minutes of until hot and bubbling. Broil for a minute or two to get the top nice and bubbly crisp.

Looks like a busy week Leeann! If you have never made meat loaf in the crock pot, beware of the fat content of your meat or if possible, sit the meat loaf on a rack in the crock pot first. that way it isn't sitting in the grease. I also love to put a chunch of mozerella cheese through the middle of my meat loaf. I also like to use a mixture of beef, veal and pork and I often put a couple of slices of bacon on the top and some BBQ sauce mixed in with the meat. I skip the whole catsup thing all together. But I know everyone likes it a little different and the catsup topping is very popular! In any case, easy meal for that night. Just what we like.

By the way, I have no idea what a chunch is. I meant chunk! lol I have had two glasses of wine. So I have an excuse! lol

Looks great! I am especially grateful for the carrot cake recipe you passed along. It's one of Ibrahim's favorites and I've never made it from scratch. Needless to say, I don't find it in a box here! LOL! I wanted to do one for his birthday earlier this week, but wouldn't have been able to bake it without an oven anyways. But it is good to have a recipe for some future need.

And since Nic was offering meatloaf ideas, I recently tried something that was YUMMY!! I mixed up 1/4 cup brown sugar, 1/4 cup ketchup and 1 cup apricot preserves and toppped my meatloaf with that. I wanted to lick the pan! Ok, that would be gross, so not really, but it did make a really delicious glaze.

That chicken cheese recipe looks great, I will have to try that! I've also heard good things about that Panko for breading on chicken and fish.

I just have to tell you that I accidentally closed the window I had you up in, and I had to frantically go through different sites to find you. I needed your recipes! I wasn't going to give up until I found your site again. Now I am going to bookmark you before I lose you again. :-) LOL!

Okay leeann...this is my third attempt to post a comment and if this one doesn't go...i'll just e-mail!!! aarrrrgggghhhhh

The chicken dish sounds very similiar to what I do, but, instead of putting on rice (my hub. is verrrry particular about what goes on top of rice...very few things pass!!). I mix the chicken (or sometimes ground beef) with about 3/4 cup of other stuff and then wrap up in tortillas and put in dish and cover with the remaining soup stuff...throw on some cheese and bake!! The boys and I love it!!

Have a great week...busy busy busy!! But...for me, I would rather be busy...too much free time makes me a bit crazy!!!
